berry aspic

A very refreshing dessert during the summer. 

It is easy to make and can be done with any berries.

A must for it to be accompanied by a dollop of whipped cream.

Ingredients

  • 600-700 g raspberries and strawberries

  • 350ml water

  • 150ml raspberry or strawberry syrup

  • 1 tsp lemon juice

  • 2 tbsp sugar

  • 40ml berry liquor (I used blueberry liquor)

  • 12 sheets of transparent gelatine 

  • Sweetened whipped cream or vanilla sauce to serve

 

Method

  1. Put the gelatine sheets in a bowl of water and let them soften. It takes 7 to 10 minutes.

  2. In the meantime, warm up the water, sugar and syrup in a pot until the sugar dissolves. Let it cool a bit, then add the squeezed gelatine into it and stir until it melts. Add the liquor and lemon juice and stir.

  3. Put the berries into a rectangular cake form or a jelly form, if you have this, and add the liquid. 

  4. Refrigerate for 5 hours or overnight.

  5. Eat the jelly with a dollop of sweetened whipped cream or vanilla sauce.
