bresaola and rocket salad


A very easy salad to prepare and one of my favourites, it's perfect for the summer!

bresaola and rocket salad

 

Ingredients

  • Bresaola (dry-cured beef)

  • fresh rocket leaves

  • Parmesan shavings

  • juice from half a lemon

  • salt and pepper to taste

 

Method

  1. Spread the bresaola out on a plate and drizzle with a few drops of fresh lemon juice.

  2. Cover with the fresh rocket leaves and sprinkle the Parmesan shavings on top.

  3. Drizzle with olive oil and the rest of the lemon juice, and add some salt and pepper to taste.

 

Tips & cheats

  • For a vegetarian option, replace the bresaola with sautéed mushrooms like champignons or portobello.
