A great side dish! I like to eat it with gyros and tzatziki.

bulgur in a tomato sauce
3-4 portions
Ingredients
240g coarse bulgur
1 big onion, finely chopped
5 tbsp tomato paste
480ml vegetable or chicken broth
50ml olive oil
Method
Use a deep pan or pot with a lid. Heat the pan on a low temperature, add the olive oil and, when hot, sauté the onion with the lid on.
Add the tomato paste, mix well, and let it cook for half a minute.
Add the bulgur and mix.
Add the broth and salt to taste, cover with the lid and let it cook for 15 mins.
Turn off the heat and let the bulgur rest for 10 minutes with the lid on, then drizzle a bit of olive oil on top.
Tips & cheats
If you use a finer bulgur, adjust the time of cooking according to the package.
