chicken livers with caramelized onions

This is my comfort food, chicken livers with caramelized onions, french fries and salad. Usually I eat them with a cabbage salad but today I made it with tomatoes, cucumber and onions.

Ingredients

  • 2 tbsp butter

  • 2 tbsp sunflower oil

  • 500g chicken livers

  • 2 big onions, thinly sliced

  • Salt

To serve: homemade fries and tomato, cucumber and onion salad

 

Method

  1. On a low heat, in a pan with the lid on, heat up the butter and oil.

  2. Add the onions and saute until almost caramelized. It takes approximately 15 mins. Stir from time to time and add salt when almost caramelized. 

  3. In the meantime, cut each liver into 2 lobes, and remove any connective tissue. 

  4. Salt the livers and add them to the pan on top of the onions. At this point, do not put the lid back on the pot. Saute the livers for 5 minutes on each side until brown, but still pink in the middle.

  5. Eat them with homemade fries and a salad.
