Creamy spinach with fried eggs


This is a very common dish during springtime in Romania and it’s eaten with sunny side up eggs and fresh white bread.


The spinach in today’s recipe is from my in-laws' garden - one of the best vegetable gardens in the world!

Ingredients

  • 800g fresh spinach

  • 50g butter

  • 2 tbsp all purpose flour

  • 250 ml milk

  • 5 garlic cloves, grated or minced

  • juice of ½ lemon

  • ½ tsp salt or Vegeta ( vegetable-flavoured salt; see my homemade recipe here)

 

Method

  1. Remove stems from spinach, wash it, then blanch it in boiling salted water.

  2. Strain the spinach and chop finely or blend it.

  3. Heat the butter in a saucepan, then add the flour and cook until slightly pale, stirring constantly. Pour in the milk and stir until the sauce has thickened.

  4. Add the spinach, garlic, lemon juice and salt or Vegeta. Cook for 2-3 minutes.

  5. Serve with sunny side up eggs and fresh white bread (see the recipe here).
