This is my mum's dish, a tasty and simple Transylvanian dish.
Enjoy!
cumin soup
3 portions
Ingredients
15g cumin seeds
2 tsp Vegeta or 1 chicken cube
1.5L water
1 tbsp sunflower oil
Roux: 1 tbsp flour, oil
Optional: 1 tsp butter
To serve: croutons
Method
Heat 1 tbsp of sunflower oil in a pot, add the cumin seeds. Let them cook for 1 minute to release the tase.
Add the water and cover the pot (careful, the hot oil may spatter!)
Add the Vegeta or chicken cube. Let the soup cook for 20 mins, taste and, if you want a stronger cumin taste, let it cook for a little longer.
Make the roux: in a pan cook the flour and oil until browned. Thin it out with some of the soup to prevent clumps, then add it to the pot.
Once the soup is finished, strain it to remove the cumin seeds.
Optional: my mum likes to add some butter at the end as well, to give it a glossy look.
Serve in bowls, add some croutons and it's ready to eat!
Tips & cheats
My mum doesn't like all the little veggie bits in Vegeta or a chicken cube, so she dissolves them first in a little bit of water and strains them into the soup.
