This is my mum’s recipe.
I love the taste of butter, cocoa and walnuts. It's still one of my favourite desserts.

Ingredients
The batter:
8 eggs, separate egg whites from egg yolks
8 tbsp powdered sugar
8 tbsp ground walnuts
1 tbsp cocoa
The cocoa ganache:
200 g unsalted butter
150 g powdered sugar
2 tbsp cocoa
2-3 tsp ground walnuts for decoration
Method
Preheat the oven to 160C. Line a baking tray with baking paper. The one I use is 25x25 cm.
In a bowl, whisk the 8 egg whites with a pinch of salt and sugar to soft peaks, then gradually whisk in the 8 egg yolks, ground walnuts and cocoa.
Pour the mixture into the tray and bake it for 30 minutes.
Meanwhile prepare the cocoa ganache. On the stove over low heat, bring butter, sugar and cocoa to a boil. Stir until combined.
Pour the ganache on top of the cake. Decorate with ground walnuts.
