Curd cheese is very popular in Romanian cuisine.
To make 700g of curd cheese you need 3 litres of full fat milk.

Ingredients
3 L full fat milk
6 tbsp lemon juice
Method
Pour the milk in a pot and right before it starts boiling, lower the heat and add the lemon juice. Stir continuously until curds start forming. Leave to cool for a while, then using a sieve with a muslin cloth on top, strain the milk.
Tip: Save the strained milk as you can use it to make sour soups, polenta, etc.
The curds will be on the muslin cloth. Squeeze as much liquid out as possible, then return it to the sieve and place a heavy weight on top to help remove the remaining moisture. It’s better to leave it overnight, then store the curds in a plastic container in the fridge.
Use the curd cheese for desserts or eat it on top of hot polenta with sour cream.
