japanese style potato salad


My friend Iulia brought this salad to a potluck party. I liked it and asked her for the recipe. It seems she cooks like me, doing all the measurements of ingredients “by eye”. So here is a recreation of that salad.

Ingredients

  • 3-4 medium potatoes, boiled in salted water, peeled and diced

  • 100-120g sugar snap peas, stringless, boiled in salted water for 1 min and drained (they should be crunchy)

  • 120g Japanese mayonnaise or any other mayo

  • 1 tbsp roasted sesame seeds oil

  • ½-1 tsp Wasabi 

  • 2 tbsp rice vinegar

  • Salt to taste


To serve: 1 tbsp black sesame seeds or roasted sesame seeds to sprinkle on the salad

 

Method

  1. Mix well the mayonnaise, oil, wasabi and rice vinegar, then add it to the potatoes and peas. Mix together and taste for saltiness. If needed, add some salt. Sprinkle sesame seeds on top of the salad.
