mezze - moutabal, hummus and tzatziki

These quick and easy mezze are always a crowd-pleaser at family meals and dinner parties.

mezze - moutabal, hummus and tzatziki

 

moutabal

 

 ingredients:

  •  2 medium aubergines

  • 1 garlic clove, grated

  • 1 tbsp tahini

  • 2 tbsp full fat greek yogurt

  • 1 tbsp olive oil, cold pressed or extra virgin

  • 1 tbsp lemon juice

  • Salt to taste


  1. With a fork, pierce the aubergines a few times and then grill them. 

  2. When soft, put them in a sieve to strain, then peel them.

  3. Blend all ingredients. Put moutabal in a bowl and refrigerate for at least 30 minutes. 

  4. Drizzle olive oil on top before eating with pita bread.


hummus


ingredients:

  • 250g chickpeas, cooked

  • 80 ml olive oil, cold pressed or extra virgin

  • 1 garlic clove, grated

  • Juice of ½ lemon or more

  • 1 tbsp tahini

  • 1 tbsp of water (if you use canned chickpeas, use the liquid from the can)

  • Salt to taste

  • Extra: sweet paprika for decoration


  1. Blend all ingredients together. 

  2. Put the hummus in a bowl and refrigerate for at least 30 minutes.

  3. Drizzle olive oil and sprinkle sweet paprika on top before eating with pita bread.


tzatziki


ingredients:

  • 3 cucumbers, grated

  • ½ tsp salt

  • 300g full fat Greek yogurt (if I have labneh I like to use half yogurt, half labneh)

  • 1 garlic clove, grated

  • 2 tbsp olive oil, cold pressed or extra virgin

  • 1 tbsp lemon juice

  • 1 bunch of dill, finely chopped


  1. Blend all ingredients together. 

  2. Put the tzatziki in a bowl and refrigerate for at least 30 minutes. 

  3. Drizzle some olive oil on top before eating with pita bread.
