Making these oyster mushroom chips may result in a messy kitchen, but the process is super easy and the end result delicious!

oyster mushroom chips
Ingredients
500g oyster mushrooms
2 eggs, beaten
100g all purpose flour
1 tbsp cornstarch
100g grated parmesan
Salt and pepper
300 ml water
Sunflower oil to fry the mushrooms (I used 2L)
Method
Mix the eggs with flour, cornstarch, parmesan, salt and pepper, then gradually add water. Whisk until you have no lumps.
Tear the mushrooms into strips, then pour the batter on them. Mix well and then deep fry them.
Serve with a red dipping sauce made of 2 grated tomatoes, grated zest from ½ lemon, 1 garlic clove, olive oil and salt or with a white dipping sauce made from 4 tbsp greek yogurt, 1 tbsp mayonnaise, 100g blue cheese.
