romanian cauliflower spread

The perfect side dish for a party!

This is one of my favourite foods from my hometown of Medias, in Transylvania.

I often bring it to potluck parties in KL, where it is very popular.

This recipe is for my friend Camelia.

Ingredients

  • Cauliflower - 1kg, cut into florets

  • Onion - ½ medium one, finely diced

  • Mayonnaise - 1 cup

  • Fresh parsley leaves - 1 big bunch, finely cut

  • Black pepper - 1tsp

  • Salt and pepper, according to taste

To serve: fresh bread

 

Method

  1. In a pot, bring water to boil, add salt and then the cauliflower florets. Cook them for 15-20 minutes, then drain.

  2. Leave the cauliflower in the sieve to cool for at least 30 minutes.

  3. Once cooled, place the cauliflower in a kitchen cloth and squeeze as much of the liquid out as possible. Or squeeze out the water using your hands, if you don’t have a cloth.

  4. Place the cauliflower in a bowl and mix well with the mayonnaise, onion, parsley leaves, salt, and pepper.

  5. Leave it to rest in the fridge for at least 30 minutes or, better, overnight.

  6. Serve it spread on a good white bread. Check out my homemade bread recipe here.
