The perfect side dish for a party!
This is one of my favourite foods from my hometown of Medias, in Transylvania.
I often bring it to potluck parties in KL, where it is very popular.
This recipe is for my friend Camelia.

romanian cauliflower spread
Ingredients
Cauliflower - 1kg, cut into florets
Onion - ½ medium one, finely diced
Mayonnaise - 1 cup
Fresh parsley leaves - 1 big bunch, finely cut
Black pepper - 1tsp
Salt and pepper, according to taste
To serve: fresh bread
Method
In a pot, bring water to boil, add salt and then the cauliflower florets. Cook them for 15-20 minutes, then drain.
Leave the cauliflower in the sieve to cool for at least 30 minutes.
Once cooled, place the cauliflower in a kitchen cloth and squeeze as much of the liquid out as possible. Or squeeze out the water using your hands, if you don’t have a cloth.
Place the cauliflower in a bowl and mix well with the mayonnaise, onion, parsley leaves, salt, and pepper.
Leave it to rest in the fridge for at least 30 minutes or, better, overnight.
