Polenta is a staple in Romanian cuisine and we like to eat it with everything from soups to main courses or... simply mixed with some delicious cheese like in this recipe.

Ingredients
200g polenta
1L water
1 tsp salt
500g cheese (the Romanian cheese, branza de burdurf, is white and slightly spicy; substitute with 250g Feta cheese 250g grated cheddar or any yellow cheese you have)
To serve: creme fraiche or sour cream
Method
Boil the water, add salt and sprinkle in the polenta while whisking.
Cover with a lid, lower the heat, and leave to cook for 15 minutes, stirring from time to time.
When cooked, add the cheese and stir.
For a true Romanian experience, serve with a thick layer of creme fraiche or sour cream on top.
Tips & cheats
This polenta can be eaten hot with Transylvanian cold soups made with greens (see the recipe here). Do not add creme fraiche or sour cream in this case.
