romanian polenta with cheese


Polenta is a staple in Romanian cuisine and we like to eat it with everything from soups to main courses or... simply mixed with some delicious cheese like in this recipe.

Ingredients

  • 200g polenta

  • 1L water

  • 1 tsp salt

  • 500g cheese (the Romanian cheese, branza de burdurf, is white and slightly spicy; substitute with 250g Feta cheese 250g grated cheddar or any yellow cheese you have)

To serve: creme fraiche or sour cream

 

Method

  1. Boil the water, add salt and sprinkle in the polenta while whisking.

  2. Cover with a lid, lower the heat, and leave to cook for 15 minutes, stirring from time to time.

  3. When cooked, add the cheese and stir.

  4. For a true Romanian experience, serve with a thick layer of creme fraiche or sour cream on top.

 

Tips & cheats

  • This polenta can be eaten hot with Transylvanian cold soups made with greens (see the recipe here). Do not add creme fraiche or sour cream in this case.
