summer toast with avocado and omelet


One Sunday morning I made this dish and it started from the blooming thyme I have growing in my little garden.

Ingredients

  • ½ French baguette

  • 4 eggs

  • 1 avocado, thinly sliced

  • 1 big tomato, grated

  • 1 garlic clove, grated

  • Zest and juice of ¼ lemon

  • 50g any yellow cheese (like Edam, Cheddar), grated

  • 20g Parmesan, grated

  • Salt and black pepper

  • Olive oil

  • Leaves from 3-4 sprigs of fresh thyme

 

Method

  1. Cut the baguette in half and then slice each half lengthwise. Toast and then drizzle them with olive oil.

  2. Mix the tomato with lemon zest, garlic, thyme leaves, 1 tsp olive oil and salt.

  3. Add the mixture on top of the toasted baguette slices, then the cheeses and slices of avocado Drizzle with olive oil, lemon juice, and salt.

  4. Make an omelet with eggs, salt and pepper and add it on the toast.

  5. Finish the dish with a few thyme flowers on top.
