This delicious chicken is one of my favourites Thai foods.
I know I keep saying every dish is my favourite, but Thai Basil Chicken was one of the first dishes I tried when visiting Thailand for the first time, and I still love this food very much.
Enjoy!
thai basil chicken
Ingredients
60g peanut oil or vegetable oil
60g garlic cloves, sliced
60g or 4 long red chillies, sliced (take out the seeds if you cannot eat to spicy)
600g chicken breast, finely diced
60g Thai holy basil (substitute with half-half sweet basil leaves and mint leaves)
3 tbsp oyster sauce
3 tbsp sweet soy sauce
1 ½ tbsp light soy sauce (substitute with Worcestershire or Hoisin sauce)
To serve: steamed Jasmine rice
Note:
Additionally I like to add 1 tbsp of dry chilli flakes and 1 grated clove of garlic right before the end.
Method
Have everything prepared before you start cooking, and the wok and oil must be very hot when you start cooking.
Stir-fry the garlic and chillies until fragrant, then add the chicken and leave it to brown, stirring from time to time.
Add all the sauces and mix well. Leave to cook for 10-20 seconds so the flavours develop, then add the Thai basil.
Stir a few more times, then take off the heat.
Serve with Thai fragrant rice like Jasmine rice.
