tomato and avocado salad

A very easy salad to make. Can be eaten by itself or can accompany grilled fish or meat, or even a hard cheese, like halloumi.

Good, ripened, sweet tomatoes are a must in this recipe.

Ingredients

  • 1 big, red tomato, sliced

  • 1 big, yellow tomato, sliced

  • 1 avocado, sliced or diced

  • 2-3 spring onions, finely sliced

  • 3 tbsp pine nuts or sunflower seeds, dry roasted

Dressing:


  • 30g extra virgin olive oil

  • 15g  balsamic vinegar

  • ½ tsp Dijon or yellow mustard

  • ½ tsp honey

  • salt to taste

  • the juice of a half lemon, if needed


 

Method

  1. Add the dressing ingredients in a jar and shake it very well.

  2. On a large ceramic platter layer the tomatoes, one red, one yellow. On top of them put the avocado, sprinkle on the pine nuts and spring onions and drizzle the dressing.
