This is one of my favourite dishes. It’s best during summer when you can find fresh green beans but you can make it in winter, too, with frozen beans.
transylvanian green bean salad
Ingredients
500g fresh green beans
1 garlic clove, grated or minced
1 bunch of fresh dill leaves, finely cut, or 1 tsp dry dill leaves
100g mayonnaise
salt, according to taste
To serve: fresh white bread (see recipe here)
Method
Trim the end of the beans and cut them into 4cm pieces. Cook them in salted, boiling water until tender, about 5 minutes. Drain and cool.
Gently mix beans with the rest of the ingredients and leave the salad in the fridge for at least 30 minutes, for the flavours to develop.
Eat with fresh, white bread (see the recipe here).
